Gaston was a waiter in Mama Lucchesi's, an Italian restaurant in Little Italy, New York.

Gaston was working at the restaurant during the night of the attack by the Brotherhood. When Vinnie was taking Jackie Estacado to his table, he accidentally bumps into Gaston as he was carrying an order to Swifty. Vinnie apologises for this and Gaston walks away to Swifty. It's implied he dies during the shootout at the restaurant.
